underutilized plants for food

Poverty and malnutrition are major problems in Africa. This is due to lack of enough protein rich foods which support growth and development. use of underutilized foods which are rich in protein and other food components have been proposed as the solution to the problem. Morringa oleifera, Tigernut are some of the examples. many are yet to be discovered though. therefore there is need for Africans to really work in this area so that there can be food sufficiency in Africa.
Efforts are been made by food scientists to study many of these plants to ascertain their composition in term of nutrients, antinutrients and digestibility. efforts are also on on the incoorporation of these foods in food product development.
